Grandma Vuković’s Palačinke (Crepes)

Serves: 14 crepes
This recipe is adapted from my grandmother, who never measured when she cooked palačinke, but helped to quantify the ingredients for us.
ingredients for the palačinke:
  • 4 eggs
  • 3 teaspoons sugar
  • 1 teaspoon salt
  • 2 ¼ cups milk
  • 2 cups flour
  • 4 tablespoons melted butter
ingredients for the cottage cheese filling:
  • 2-1/2 cups "dry" cottage cheese or strained small curd cottage cheese or strained regular lowfat cottage cheese
  • 1 tablespoon sugar
  • 2 eggs
  • dash of salt
  1. Separate the egg yolks and whites. Add sugar, salt, and ½ cup milk to the beaten yolks. Gradually add flour alternately with milk and melted butter, beating or whisking until smooth. Fold in slightly beaten (less than soft-peak stage) egg whites. Melt 1 teaspoon butter in a sauté pan using medium-low heat. Remove the pan from the heat. Stir the batter before each pour. Pour about ⅓ cup batter into the pan, tipping the pan in circular motions to evenly coat it with batter. Replace on burner. After a few minutes, when batter starts to brown on the bottom take a spatula and get close to the center under the palačinka and flip it over to cook the other side. Fill with jelly or cottage cheese filling. Optional: Sprinkle with powdered sugar.
  2. To make the cottage cheese filling: Add 1 tablespoon sugar, a dash of salt, and two eggs to the cottage cheese. Mix well. Spread a heaping soup spoon full of the mixture along one end of the palačinka and roll up. Put the palačinke in a shallow greased baking dish, side by side, and bake for 20-30 minutes at 350 degrees Fahrenheit.
